Roast Beef With Crushed New Potatoes

Ingredients

Roast Beef

  • 1kg Piece topside beef
  • 7 tbsp extra virgin olive oil
  • 1 tbsp whole black peppercorns
  • 2 tsp sea salt

Crushed Potatoes

  • 750g baby new potatoes
  • 1 garlic clove, crushed
  • Zest of a lemon
  • 3 tbsp capers, drained
  • 50g olives, pitted and roughly chopped
  • 50g watercress
  1. Preheat the oven to 230°C, gas mark 8. Place the beef in a roasting tray and rub with 1 tbsp of oil. Grind the peppercorns and salt and rub over the joint. Roast for 20 minutes. Turn the heat down to 170°C, gas mark 3 and cook for 12-15 minutes per 500g for medium-rare or 20 minutes per 500g for medium-well done.
  2. Place the potatoes in a pan of cold water,bring gently up to the boil add salt and simmer for 15 minutes gently until they are tender. In a jug, mix the remaining olive oil, garlic, lemon zest, capers and olives. Take out the beef when ready, cover, and rest for 20 minutes. Drain the potatoes and return to the pan. Crush into large pieces, pour over the dressing, season and fold in the watercress. Serve the beef thinly sliced with potatoes .
