Inspire Vegetable Bake
Serves 2-4Ingredients
- I pack inspire vegetable medley
- 25g butter
- 25gplain flour
- 600 milk
- salt and white pepper
- 100g/ cheese, grated (e.g. mature cheddar, Gouda, gruyère)
Serve with a steak or any meat or just on its own with some bread
- Melt the butter in a saucepan.
- Stir in the flour and cook for 1-2 minutes.
- Take the pan off the heat and gradually stir in the milk to get a smooth sauce. Return to the heat and, stirring all the time, bring to the boil.
- Simmer gently for 8-10 minutes and season with salt and white pepper.
- Stir in half the cheese and allow to melt. Don t re-boil the sauce or it will become stringy.
- Bring a large pan of water to the boil, add the pack of inspire vegetable medley to the pan and simmer until the carrots are just tender. Drain
- Place in a large oven proof dish. Pour over the cheese sauce, sprinkle over the remaining cheese and place under the grill until bubbling and golden brown.
