Garlicy New Potatoes

Ingredients

  • 1kg potatoes
  • 2 cloves garlic, peeled & crushed
  • 30g oil
  • Pinch of good quality sea salt
  1. Cut the potatoes into quarters (if large) or halves (if medium-sized). There's no need to peel, unless you want to. Boil the potatoes for about 10 minutes, until starting to soften. Drain well.
  2. Mix the garlic and the oil together with the salt.
  3. Mix the potatoes well with the oil, to make sure they are all coated.
  4. Bake in an oven-proof dish at 180 degrees C for 20-30 minutes, until starting to brown.
