Cheddar Cheese Mashed Potatoes
Serves 4
Ingredients
- 4 large baking potatoes, about 2 pounds, peeled and cut into 1-inch pieces
- 1 cup heated milk
- 2 tablespoons butter, room temperature
- 4 ounces shredded process American cheese
- 4 ounces shredded sharp Cheddar cheese
- 1/4 teaspoon ground black pepper
- 1/4 teaspoon salt
- 1/4 teaspoon paprika
- pinch ground red pepper
- Cook potatoes in boiling water until tender, about 15 minutes. Drain well.
- Put potatoes back in saucepan; stir over low heat until dry, about 2 minutes. Remove from heat.
- Mash, adding about 1/2 cup milk and the 2 tablespoons butter.
- Add grated cheese and seasonings.
- Beat with a spoon, adding remaining milk until desired consistency is reached.
